I really need some help and inspiration ...

Hi All, this is the first time I have been in this topic, and two hours later ...

 

anyhow, I am wondering if anyone has some inspiration for some recipes I could try? Now comes my problem :roll:

 

I have been vege pretty much my whole life, no meat or fish, and recently found out I can't eat wheat anymore. Which leaves me with rice, pretty much, every day or potato. My husband is type 1 diabetic so i need to be careful with him too.

 

Plus I am trying to lose weight :doh: I should be like a twiglet (if they weren't wheat) but I'm not!

 

The wheat substitute things are pretty dire, I have yet to fool anyone with them.

 

So any ideas appreciated - I have seen a couple of bean recipes on here which look nice so will try those too.

Hello :D

 

If you like pasta then try the DS range, I think most supermarkets sell it, I have coeliac and gave up eating pasta as the alternatives were like grit, but this is OK, and my children have had it and not noticed until I mentioned it :lol: and I'm sure it should be fine for your OH too.

 

I now just fiddle with recipes and see how they turn out with gluten free flour which you could try too, usually you need quite a bit more moisture in the recipe, but I haven't had too many failures :lol:

Might have some good recipes for you involving quorn. Will have a look.

Meanwhile hows about this slimming world no pastry quiche? Good to eat hot or cold.

 

Ingredients

1 tub cottage cheese

4 medium – large free range eggs

1 medium onion (chopped)

1 tomato (sliced)

 

Lightly grease a flan dish / round or square deep baking dish. 8 – 9” diameter.

Put the chopped onion into the dish. Now in a separate bowl, beat together the tub of cottage cheese and the eggs. Pour this mixture over the onion in the dish & make sure you spread to the edges / corners. Now decorate the top with the sliced tomato.

Bake on the middle shelf for 30 minutes - Gas mark 3 160 degrees C.

When set & lightly browned, slice & serve with baked beans & jacket potato / curly fries & salad.

 

You can add more or less anything to the cottage cheese & egg base – for example – mushrooms, peppers, sweet corn, sliced boiled potatoes, cooked broccoli. Enjoy!

 

You can also make a pizza using grated potato for the base, cooking this until brown, then put on your passata, veggies & cheese & put back in the oven.

Thanks Emma, that quiche sounds a good idea, kinda like a spanish tortilla thing, hadn't thought of that and probably good cold for lunch. Thanks for writing it up :D

 

Love the idea of that pizza :drool: , I have tried a shop bought wheatfree one and it was so dry and sharp, using pots is a good way of using them up too, cool idea - thanks :clap:
