I thought I would be clever and make some mince pies, flapjacks and fudge for her to take home. The flapjacks and mince pies went well, but the fudge didn't. I've never made it before and it went quite well until it came to setting it. I left it on the counter for about 2 hrs but when I came back it was still wet. So I put it in the fridge, 7 hours later it was still wet. Left it in over night (has been in there for 24 hrs now) and it is still sticky . Were have I gone wrong??? I keep it on a gentle, rolling boil for about 8 mins and then test every couple of minutes by dropping about half a teaspoonful into a bowl of cold water. If I can roll this into a ball with a finger and thumb then it's ready. It is also important to make sue everything is dissolved properly before bringing to the boil. It needs to set slowly, in a cool place, rather than the fridge. It sounds as if yours wasn't boiled for long enough, though I am no expert.
