ubereglu Posted January 11, 2009 Share Posted January 11, 2009 A simple recipe, which is basically a lot of vegetables cooked in tomatoes and then put in the oven with a lovely crumble topping! This recipe serves 4, but can easily be edited to serve less or more people. 1 tbsp vegetable oil Onion, diced 2 cloves of Garlic, crushed 1 pepper 2 or 3 carrots 6 mushrooms 2 smallish leeks Can of chopped tomatoes Baked Beans, (if you have some left over from previous nights) Frozen peas and sweetcorn For the Crumble: 100g (4oz) plain flour 50g (2oz) butter/marge 25 g (1oz) porridge oats 50g (2oz) chopped mixed nuts or seeds, (we tend to use a mixture of seeds instead) 1Preheat your oven to 190 C/375 F/Gas Mark 5. Chop up all your ingredients so they're ready to be put in the pan 2Heat a large pan on a medium heat with the oil, then add the onion, garlic until soft. Then add the pepper and leeks, (if using) and cook through. 3Next add the mushrooms, carrots and the can of chopped tomatoes, bring to the boil and then turn down and leave to simmer for about 10 minutes. 4Add the baked beans and frozen veg and cook them through until defrosted, leave to simmer until the mixture is thick, then place into a large ovenproof dish. 5For the crumble sieve the flour into a large bowl and add the butter/marge, rub in with your fingers to form breadcrumbs. Next stir in the oats and seeds/nuts and sprinkle over the crumble and press the mixture down with the back of a fork. 6Bake in the oven for 35 minutes until golden. Eat.
