MadMitch Posted March 11, 2009 Share Posted March 11, 2009 Can someone point me in the direction of a scone recipe. I'm not really a baker (except bread) and I need something that I can use eggs for. Any other suggestions as to what I can do with 70 eggs greatly appreciated. Only 10 houses where I live and nearly all are farms with chickens so can't really sell them. ..lay a little egg for me Posted March 11, 2009 Share Posted March 11, 2009 Hmm, scones don't use many eggs though! Some recipes don't have any. How about the famous lemon drizzle cake? Ice cream? Any of the fatless sponge cakes use a lot of eggs as the eggs make up for the lack of butter. fluffyknickers Posted March 11, 2009 Share Posted March 11, 2009 Meringue Lemon curd I am making a lemon drizzle cake today from the tv programme "something for the weekend". If you google Something for the weekend and go to recipes youll see it. Uses Lemon curd in the middle too that you could make. You could keep the shells (blow them) and decorate for easter for an easter tree. Muffins - very easy no electric mixing required and can be frozen Cub cakes - easy. I just put all the ingredients in and beat together (if need a recipe I have a nice one). You could make loads and freeze. Just dd what you fancy - fried pancetta, courgette etc, then add 3-4 eggs beaten with a little milk,seasoning & a handful of grated cheese. Bake in the oven for about 25 mins. Lydia Posted March 11, 2009 Share Posted March 11, 2009 Gary Rhodes's bread and butter puddinguses 8 egg yolks and is delish. I generally make pavlova or something with some of the whites too. Jamie Oliver does a stuffed bread ring recipe that uses 12 hard boiled eggs. It's in his Happy Days book and probably online somewhere. How do you end up with that many? x 8 chickens and only two of us and they're pretty much laying full on at the moment. I got pure breeds as they weren't supposed to lay as many but they lay pretty much every day. Neither of us are really cake eaters but were going to have to start I think. So yesterday the chickens had 12 close to used by date boiled eggs with sweetcorn for tea. I made scones, snickerdoodles, lemon curd, and muffins and today will be quiches I think. Think its on the "honey icecream" thread.
