Cinnamon Posted March 11, 2009 Share Posted March 11, 2009 Just been down to dig over my last raised bed, & have found 10 gorgeous massive parsnips which were sprouting again Do you reckon they are OK to eat, or will they be woody & awful? Matthew Posted March 11, 2009 Share Posted March 11, 2009 depends on how much new growth there was. Last weekend there was nothing and then Sat it was like parsley growing!!! I've taken a gamble on catching them earlier enough and have cored the big ones and frozen them... Valkyrie Posted March 13, 2009 Share Posted March 13, 2009 Went to the farm for veg earlier this morning and her parsnips are still being harvested. She said that they have grown even more in the soil over winter while everything else goes on hold. They are truly delicious parsnips and not woody even though they are huge, so I would think yours would be fine. If in doubt, you can always cut out the core - which is what I have done before (when I have a successful year with them). If the knife won't go through without a struggle, then that's the time to pop them on the compost - and watch them grow in the heap! Quote Link to comment Share on other sites More sharing options...
