Cinnamon
HELP! Since my daughter Cleo beacame a veggie after Christmas, I have found it easy to incorperate her meals into family meal time. We now eat lots of veggie meals a week, & I keep a well stocked freezer. But Easter is looming, & I want to cook a Greek style roast lamb dish I have seen in the new Good Food magazine, & need to make Cleo something special too. Any ideas? it needs to be served with Oregano roasties & greens, & be special enough for her not to feel left out
SAB
Not sure what to recommend, but just wanted to welcome Cleo to veggiedom and to congratulate you and your family in supporting her with it
Looney
How about a veggie moussaka - to keep in with the Greek theme (Moussaka is Greek isn't it .... )
bigmommasally
I made a lovely silton and nut loaf last week for when my veggie daughter visited. She loved it.
Cinnamon
Sadly Cleo doesn'y like Aubergine much, so Moussaka is out. Stilton loaf sounds good though, but it is only for one person....now, if I can slice & freeze the leftovers
Lesley
I always make the Almond Nut Roast for special occasions - and leftovers freeze well or make good pate for sandwiches.
bigmommasally
I'm not sure if the Stilton Nut Loaf would freeze or not as it has a layer of stilton in the middle. When I cooked it all the meat eaters wanted a slice too so we had no leftovers to think about freezing. Am happy to write up the recipe if you're interested. Cinnamon
Thanks Sally, but I think Lesleys Almond Roast will fit the bill nicely
dancing cloud
But if the offer of the stilton nut loaf recipe is still open, I'd like it please Stilton freezes quite well, just comes out a bit crumbly, and if you're cooking it that doesn't matter
Cinnamon
Quick update - the almond roast was just wonderful & we all had a little bit & all loved it. I am suprised really as the recipe looks a bit, well, bland...but I couldn't have been more pleasantly suprised
Lesley
- the recipe does look bland doesn't it! Glad you all liked it
