Sha x Sha, Delia says in one of her baking books that if the dough is less than an inch thick when rolled out, it won't rise, so it's certainly worth making them thick to start with. Christian Posted May 24, 2009 Share Posted May 24, 2009 I have been making a few different recipes of scones. I have found the BEST in my new cookery book - river cottage family book. It uses self raising flour and baking powder - I will post on here if all interested.x I think that must be the same or similar to the recipe Christian uses - he made excellent cheese scones when we went to see him, he said he used SR Flour and baking powder. And I always add a few drops of lemon juice to the milk to make it slightly sour. If I forget, they don't seem to rise as well. Something to do with the acid and the baking powder??
