I recently tried this one and it was good: from the Waitrose magazine. I particularly like the fact that it has no added sugar, only fruit sugar, and you use the apple peel. I did think it was overly buttery for my taste though, and next time will try reducing the butter by about 50%!

In a food processor, blend 150g butter with 150g destoned dates and 300g cored but unpeeled apples, and transfer to a bowl.

Mix 75g white bread flour with 75g almonds & 4tsp baking powder.

Lightly beat 3 eggs, then mix a third of the eggs into the apple mix, then mix in a third of the flour mix. Continue adding the eggs and flour alternately to the apple mixture till all combined.

Spoon into greased 20cm round tin, bake 1800C for 45 mins or till skewer comes out clean. Cool slightly in tin before turning out.
