ali-s Posted October 12, 2006 Share Posted October 12, 2006 Heres a nice receipe Somerset Apple Cake 75g butter 175g caster sugar 1 orange rind, grated 225g self-raising flour 450g Bramley apples, peeled, cored and cubed 2 eggs, beaten 2 tablespoons milk 25g candied peel, chopped About 1 tablespoon granulated sugar Grease and flour a 23cm/9 inch cake tin Cream butter, sugar and orange rind, and beat until light and creamy Mix 1 tablespoon of the flour with apples in a dish Put eggs and milk in bowl with the creamed butter Add remaining flour, peel and apples to the creamed mixture and blend well with a metal spoon Turn in prepared tin, sprinkle with granulated sugar Bake in a moderate ove, Gas4, 350oF, 180oc, for 40 to 50 minutes until gloden brown Serve cold as a cake or hot as pudding with cream Quote Link to comment Share on other sites More sharing options...

kannie Posted October 12, 2006 Share Posted October 12, 2006 I recently tried this one and it was good: from the Waitrose magazine. I particularly like the fact that it has no added sugar, only fruit sugar, and you use the apple peel. I did think it was overly buttery for my taste though, and next time will try reducing the butter by about 50%! In a food processor, blend 150g butter with 150g destoned dates and 300g cored but unpeeled apples, and transfer to a bowl. Mix 75g white bread flour with 75g almonds & 4tsp baking powder. Lightly beat 3 eggs, then mix a third of the eggs into the apple mix, then mix in a third of the flour mix. Continue adding the eggs and flour alternately to the apple mixture till all combined. Spoon into greased 20cm round tin, bake 1800C for 45 mins or till skewer comes out clean. Cool slightly in tin before turning out. Quote Link to comment Share on other sites More sharing options...
