BocBoc Posted May 18, 2009 Share Posted May 18, 2009 With so many eggs in the house now, we are having lots of scrambled eggs and lots of omeletes. We seem to have the same thing each week so I was just wondering how do you lot cook your omelettes and what do you have in them? We tend to have a six egg omelette for two people with a filing of : red onion / yellow pepper / rosemary / pancetta or chorizo, cooked in the oven. Give me some inspiration!! I also make her Foaming Hollandaise, which I then portion and freeze. I love this with my poached eggs, or with fish. chickencam Posted May 18, 2009 Share Posted May 18, 2009 We make omelettes with chopped mixed herbs in with with the eggs when beaten then cooked as normal. Soft herbs like chives, parsley tarragon and coriander all work well.
