Bread Pudding

Here is our family recipe. You can add other fruit - stewed apple in a layer in very good.

 

Place 500g day old bread torn up into a big bowl.

Pour on 285ml semi skim milk & leave to stand for at least 1 hour,preferably overnight.

 

Preheat oven to 150c & grease & line the base of a a 20cm deep square tin.

 

Add 75g raisins,75g Currants, zest of 1 lemon,125g Demerara sugar,2tsp mixed spice,another 285ml semi skim milk & 2 beaten eggs & mix well with your hands (lovely fun squishy bit!)

 

Pour mix into the baking tin & cook for 1.5 hours until golden & springy.

 

Remove from oven ,leave to cool & sprinkle 25g demerara sugar on top.

Cut into squares to serve.
