chickencam Posted July 9, 2009 Share Posted July 9, 2009 Last year I froze some, by wilting it in a little butter, tipped the liquid off and put it into storage boxes in the freezer and used it in pasta dishes and quiches. You coud also just wilt it in the water that is left on it from washing then remove excess liquid and freeze. I have also done this then frozen it in ice cube trays to add to dishes one at a time. The first of this season's spinach for us was VERY early, since the plants had survived the winter, and all we needed to do was cut right back and wait for new growth.
