Lime, bitter chocolate & strawberry cheesecake

Not sure I should be posting this, you won't thank me for it .... :lol::drool::drool:

 

Base

 

75g butter

250g shortbread biscuits, crushed

 

Filling

 

400g full fat soft cheese

397g condensed milk

finely grated zest and juice of 4 limes

 

To finish

 

50g bitter chocolate, melted

50g white chocolate, melted

200g whole strawberries

 

Preparation

 

1. In a large saucepan, melt the butter and stir in the crushed biscuits. Press into the base of a 23cm (9 inch) loose-bottomed cake tin. Chill for 10-15 minutes.

 

2. In a large bowl, whisk the soft cheese, condensed milk, lime zest and juice for 5 minutes until thick and glossy.

 

3. Spoon the mixture over the biscuit base and chill for at least an hour, preferably overnight.

 

4. Remove the cheesecake from the tin and place onto a serving plate.

 

5. Top with hulled strawberries then drizzle the melted chocolates over the top and sides, then leave to set.
