The chaps at work want muffins on nights next week and I can find recipes for all sorts of muffins but I haven't got a recipe for chocolate ones ( some of my colleagues won't touch anything vaguely fruit based ). chickencam Posted September 8, 2009 Share Posted September 8, 2009 Here's the one I use, it is from Muffins Fast and Fantastic by Susan Reimer 8oz 225g plain flour 2 tsp 10ml baking powder half a tsp 2.5ml bicarb half tsp salt 5 tablespoons of cocoa powder 4-5oz 110-140g to taste (I use the lower amount) of sugar 1 egg 8floz 240ml milk 1tsp vanilla essence 3floz 90ml corn oil or 3oz/85g melted butter ( I use the oil) chocolate chips (optional) Sift together flour, baking powder, bicarb, salt and cocoa powder, then stir in sugar In another bowl beat together the egg, milk, vanilla and oil Pour all of the wet ingredients into the dry and stir until only just combined the mixture should be lumpy and the more you mix the tougher the muffuns come out. Posted September 8, 2009 Share Posted September 8, 2009 Delia never fails me: 5oz plain flour ½ level tablespoon baking powder 2 large tablespoons cocoa power 1 large egg 3 to 4 oz caster sugar 4 fl oz milk 2 oz melted butter Choc chips (off a proper choc bar) to be really naughty! Pre-heat oven to 180 degrees centigrade. Put 12 cake cases ready in a jam tart tray. Sift the flour, cocoa and baking powder into a large bowl. Mix the melted butter, sugar, egg and milk in a separate bowl/jug. Tip the wet mix onto the dry and stir a little. Add the chocolate chips if using (I use a sharp knife to s"Ooops, word censored!"e large chunks off a bar; if they’re too small they melt to nothing). Stir again. It will look awful, but that means you’ve done it right! Dollop the mix into the cake cases and put in the oven. Cook for 10 minutes, or a little longer if you like. I prefer slightly undercooked, they’re softer! Allow to cool and eat as soon as possible, they don’t keep long. Quote Link to comment Share on other sites More sharing options...

I shall be making some fruity muffins ( either blue berry or raspberry), Snickers muffins and chocolate muffins- that should cater for all of them! Couperwife Posted September 8, 2009 Share Posted September 8, 2009 Ive used ***this*** muffin recipe before (infact, i use it quite a lot ) I added some chocolate to it, the last batch I made, I used a large 100g bar of chocolate and smashed it into pieces with a rolling pin, it meant that I had big chunks and little crumbs, it worked well its dead easy to do to cathy x Quote Link to comment Share on other sites More sharing options...

If I make the goodies at least they are safe to eat. Occasionally they pop to the shop and purchase goodies. I am known as the 'Team Mum' or 'Domestic Godess' and have a reputation to uphold!
