'Do not keep Omleteers hanging with the hint of lovely food without the means to create it themselves.' I made leek and potato soup today for dinner and topped it with some crispy fried bacon and some fried garlic and thyme mushrooms. Yummy! I am no good at linky things and OH is at work so here goes - Sorry its in lbs and ounces (being old and that) 1oz butter 1lb green toms sliced 8oz potatoes peeled and sliced 1 onion sliced 2pints stock 1tin beans like barlotti/pinto/cannellini 1/4tspn dried mixed herbs whatever you have salt and pepper handful of rice (I had left over cooked but it means uncooked) 125mls single cream or chilli sauce optional 1fry onions, toms and potatoes in butter till soft 2 add beans stock and herb S&P and bring to boil 3 simmer for 30mins or till veg are tender 4 blend 2/3 of soup (I did all of it as dont like lumpy soups and kids dont - personal preferance) 5 stir in cream/chilli sauce and serve reheated I got it off a site called two sheds ( dont think its the forum member whose called 2 sheds!!) It was lovely and ES like it YS wasnt so keen but 8 yr olds are fickle. Good way to use up tomatoes besides making chutney. Quote Link to comment Share on other sites More sharing options...
