I like both cheese and chocolate fondue, but for as often as I do them I wonder if the fondue set warrants it's cupboard space! Cinnamon Posted September 17, 2009 Share Posted September 17, 2009 YES!!!!! We use it pretty regularly in the winter - we all adore Fondue & its a really social way to eat. We always have one on New years Eve, being anti social sorts who never go out anywhere I have a Fondue recipe book, but I have only ever made one in it - the Traditional one......... If we are feeling VERY greedy. we double this up 1 clove garlic Quarter pint dry white wine 1 Teaspoon lemon juice 275g Emmenthal 275g Gruyere 1 Tablespoon Cornflour 3 Tablespoons Kirsch pinch white pepper Pinch ground nutmeg Pinch paprika powder Rub the inside of the fondue pot with the garlic clove. Pour in the wine & lemon juice, & heat gently. Gradually add all the cheese,stirring in a figure of 8 motion until it is combined (I generally do this bit on the oven top, transferring the finished fondue to the burner once its done, as you can control the heat better on a stove) When it starts to bubble, blend the cornflour with the kirsch & add to the fondue. Cook for 3-4 mins more then add the seasoning & spices. Its best with cubes for French Bread.......................enjoy! Quote Link to comment Share on other sites More sharing options...
Lesley Posted September 17, 2009 Share Posted September 17, 2009 I use the same recipe as Sarah - except I add the whole garlic clove, finely chopped. After having the Fondue Party at Centerparcs we now also have cubed ham and pineapple along with the bread. Chook n Boo Mum Posted September 17, 2009 Share Posted September 17, 2009 We haven't used our fondue for ages, but when we do we invariably use oil in ours as my mum is allergic to cheese but it does make a fantastic sociable mealtime...we also have a pierrade which is a hot stone & you essentially dry fry everything ...and a raclette where you grill stuff in individual pans under a grill (strangely enough ) DS loves the raclette as they an make mini pizzas under the grill using pieces of tortilla wrap as the base with tomato paste/sauce, cheese & any toppings you like..........mmmmmmm . jlo Posted September 18, 2009 Share Posted September 18, 2009 I spent a year in Switzerland for my Gap Year and the restaurant where I worked did the yummiest fondue. They used Valais cheese which was local to them but, otherwise, the recipe was pretty similar to Cinnamon's. Sometimes at the end they would scramble an egg into the mixture just as it was getting to the crumbly burnt cheese bit and it was surprisingly good. I put on about two stones whilst I was there! Lesley Posted September 20, 2009 Share Posted September 20, 2009 The restaurant we went to in Switzerland wouldn't do fondue in the main restaurant "because of the smell" - we had to order in the bar area and suffer the smell of the fish being taken past to the restaurant!!!
