Couperwife
yummy ive decided that im going to make as much stuff as I can, and buy as little "processed/shop bought/someone else made" food as I can. it started the other day with the ginger cake, that was yummy, so today im making rice pudding. so, 2oz of pudding rice 1 oz of sugar 1 pint of milk put into oven proof dish, mix up and sprinkle with grated nutmeg put into oven at 160degC for about 1 to 2 hours (oh can I wait that long...) until the rice pudding is creamy and the skin is formed nicely on top. try to share it with others in your house enjoy cathy x edited to shorten the time, mine was in for 2 hours and it was nearly dry luckily I managed to rescue it with some milk stirred in ) Edited October 11, 2009 by Guest
Space Chick
Cathy, I think you are fab, your ginger cake recipe was incredible. However, rice pudding is the vilest, most disgusting concoction known to man and beast and I am genuinely afraid of the stuff. I have been known to run out of restaurants in tears because they have it on the dessert menu, one smell and my head is down a toilet. (This actually happened on mine and OH's first date, it didn't bother him, and well, we ended up getting married ) So this is one I shall not be sharing with others in my house, because it'll never ever be made Keep any other recipes coming though
majorbloodnock
Personally, I'm with Couperwife on this one. The only thing on which I disagree is the quantity; I've never made anything with just 2oz of rice I must admit I dot mine with butter too, though, and feel it has to be served with a big dollop of strawberry, blackcurrant or quince jam on top. Interestingly, my wife and daughter can't stand the skin on top, but my son and I fight for it (OK, we share it really, but under duress). Ain't Nobody Here
I was going to post a lovely big rice pudding picture for you, Debs, but thought your laptop might suffer . Rice pudding is OH's favourite pudding in the world . I love it too . How do you stand on tapioca and semolina ?
Space Chick
Quiet simply Ironically, I am OK with Rice as a savoury food, and use semolina in my pizza bases I am a complex creature Phil actually wants me to get some "professional help" for my Rice Pudding Phobia
Ain't Nobody Here
Sorry, Debs, but there's a rice pudding in my oven as we speak .
Mrs Webmuppet
I don't cook it in the oven I cook it slowly on the hob............no nasty skin and LMW says it tastes more like the tinned rice pud she loves.
Fourbecameeight
I make rice pudding in the slow cooker (I use the recipe on the bag but add hot milk) and it turns out really creamy and I only use semi skimmed milk. I have even made it with sweetener when we had diabetic visitors and no one complained. It is one of my OH favourites but the children will not touch it. Couperwife
I use semi skilled milk too ive never thought about using sweetener... do you use the powdery stuff? is it the same quantity as sugar? I need to change the recipe I wrote cook for 2 to 3 hours I cooked for 2 and it was nearly dry I had to re-hydrate it with more milk maybe 1 1/2 hours would be better. anyway, it tasted ok I put some home made jam in, it was definitely well recieved cathy x
Fourbecameeight
I used splenda because I was told it was closer to sugar and I followed what it said on the tub for how much to use compared to sugar. I would recommend using the slow cooker because you just turn it on and forget about it. If I want the rice pudding for the evening I put it on at lunch time. I have even used the 6l slow cooker full of rice pudding when we had a fireworks party and it all went.
chickencam
I love rice pudding, it could go into the favourite food thread for me The skin has a lovely caramel flavour too yumm. Debs do you like porridge? i love that too ans semolina I ate loads of semolina when I was expecting DS I used to make a batch for ED and myself at lunchtime because OH can't stand it, but he will eat rice pudding and the children love it too. Space Chick
No I don't like porridge either. In fact it makes me feel ill when my OH is cooking it Now that the colder weather is here, he is having it for breakfast every morning Both him and Henry the dog love it though I have to wait until he's out of the kitchen before I make my much nicer poached egg on toast (he then eats his breakfast in the study I know I'm a bad wife ) Edited October 12, 2009 by Guest
chickencam
My 2 older children both have poached eggs every day, YD has a boiled egg and I eat poached eggs for lunch. They are my favourite form of egg apart from in cake.

They are my favourite form of egg apart from in cake. Hey, hey, hey. 3 rashers of smoked back bacon (so long as you can guarantee it's not got so much water content that it shrinks to half the size on cooking), derinded and the rinds fried in a pan to extract the fat. Rashers fried in said fat. Two slices of bread "toasted" in the pan so as to soak up the remaining fat, then all assembled to make a bacon sandwich. Top with two poached eggs and serve. Food of the gods, and not half as unhealthy as it tastes or sounds.
PurpleTree
I love rice pudding, my dad made it last time we had Sunday lunch at their house. Love the skin on top too. Making me hungry just thinking about it. Daniel doesn't like it though, it's been the only thing he's been given in school dinners that he hasn't liked so far. When he was telling me about it, he said 'and they had chocolate buttons melted on the top too' with the most disgusted look on his face. He's not keen on porridge or custard either. Maybe it's a texture thing.
