Butternut squash soup recipe?

I often find squash soup too sweet so use this one for spicy squash soup that came with some squashes in a veg box:

 

Approx 1 kg squash/pumpkin

1 onion, sliced

2 cloves garlic

1 tsp finely chopped root ginger

1 chilli deseeded and finely chopped

1 tsp cumin

1 tin tomatoes

2 litres veg stock

200g coconut cream/ 200ml coconut milk

salt and pepper to taste

 

Fry onions, ginger, chilli in a little oil; add cumin and fry for 1 min; add tin of tomatoes, stock and squash. Simmer until squash is cooked through (about 20 mins). Add coconut (if using coconut cream, stir until melted). Liquidise soup and return to pan, season to taste.

 

This is from memory, so I may come back to edit it once I find where I wrote the recipe down :roll: I have a feeling it may have some garlic in it...

 

Edited to say: yep it did have garlic, and the chilli...how could I forget that? :oops:

 

PS Use a big saucepan as it makes a lot...
