I think a lot of it is to do with our modern wheat which is grown more for the uniform height and speed of growth, rather than taste. Blame the industrial revolution  . I believe spelt flour is more tasty, and fills you up better than ordinary wheat, so reduces overeating, but it wasn't machine friendly so took more effort to harvest??

I know what you mean about 'lighter' though. A few years ago I stopped eating cake and biscuits, anything in fact except my three meals a day (I only average two slices of bread a day), for a whole month. By the end of the month I was 4 lb lighter (I'm not overweight) and felt like Tigger (bouncy!!). I concluded from this that cake and biscuits were obviously an essential food group and without them I would be medically underweight

I don't know about wheat intolerance, But a few years ago I found that after eating bread my stomach bloated up very quickly & got very uncomfortable, so I stopped eating bread & the problem went & when I ate bread again not only did my stomach bloat up, I then got thrush so I came to the conclusion that it must be the yeast I had a problem with, I don't know why it took so long for me to realise, I gave up alcohol nearly 10 years ago (not that I drank much anyway) as I got to the point where I felt so bad after even just a sip it wasn't worth the hassle.

I make my own soda bread now and don't have any problems, it means I can't have crumpets, pannetone, croissants, pitta bread & bagels  and I have to read labels on food religiously as yeast is in lots of things that you wouldn't expect like crispbreads & stockcubes.

It may be worth seeing your GP to see if you could be allergy tested, I know that you can buy wheat & gluten free stuff but it can work out very expensive.

Does this happen with all bread?

I find that I can eat real bread but not processed stuff, which has been made using the Chorley Wood Process, which uses certain enzymes to speed up the rising process and doesn't allow the gluten to break down properly.

Be careful though because a lot of supermarket bakery bread is also made using this process, you really need to either make your own, or buy artisan bread, which will be costly.

Same here Chickencam. If I eat processed bread I have terrible bloating and stomach pains, however, I make all my own bread (have done for about 7 years I reckon) and I can eat loads of my bread and am fine.

I blame the Chorley wood process :x

Cathy I feel the same. I get bloated and have stomach pains. I try to limit my regular bread intake to one small malted brown roll a day for my lunch which I make myself in batches, doing the dough in the breadmaker then baking them and freezing them seperatly in bags.

The thing is if the opportunity to eat it arises I dont say no. Its a bit like not drinking coke or eating chocolate which I know gives me migraines. I have no will power
