Veggie topic

I have recently been looking for ideas for tasty vegetarian recipes and just wondered if anybody knew of a designated thread for veggie recipes on here?

 

If there is one i would be grateful for a point in the right direction as haven't been able to find anything myself.

If not, any recipes would be greatly appreciated and i'm sure would be useful for others on here, not just me! :D

The recipe I always fall back on when I can't think of anything else to cook is veggie bolognese:

 

1 onion, diced

2 cloves garlic, crushed,

2 large carrots, grated,

2 sticks celery, chopped small

Tomato paste

400g tin tomatoes

4oz lentils

3/4 pint veggie stock

1tsp dried herbs (I use oregano or mixed herbs)

Salt and pepper to taste

 

Sweat onions, garlic, carrot and celery in olive oil until soft, about 5 mins.

Add the rest of the ingredients to the pan and cook for 20-25 mins until the bolognese is thick and soft. You may want to partially cover the the pan with a lid for some or all of the cooking time.

 

Serve with spaghetti and sprinkle with (veggie!) parmesan.

 

Should make 4 generous portions.

My favourite & famous Parsai Eggs: Its like scarambled eggs with attitude!

 

Melt a k"Ooops, word censored!" of butter in a non stick frying pan.

Cook a bunch of finely chopped spring onions in it,along with 1 teaspoon grated root ginger (I use the ready mushed stuff in a jar) & 1 red chilli,finely chopped.

 

Add 1 teaspoon of Garam Masala & 20 halved cherry tomatoes - cook for a couple of minutes then scoop out.

 

Bung in 10 beaten eggs & gently scramble, stir through the tomato mix & sprinkle on some chopped coriander.

 

Serve with chunks of buttered seedy bread,toasted.

 

this will serve 4 & is yummy :P

An oldie but goodie..

Also Pasta Calabrese- cook and mash up a whole crown of broccoli with olive oil seasoning and parmesan, then stir through linguine or spaghetti.

 

Tomato Cobbler- fry off an onion and whatever veg you have in the bottom of the fridge, add some canned or chopped tomatoes and top with cheese scones (half fat to flour, some water to bind and grated Emmental, cut out with a cookie cutter and place on top) bake for 35 mins until scones are cooked.

 

I'll have a think see if I can remember any more from my veggie days.

One thing - I have only just found out that parmesan isn't veggie :oops::roll::oops:

 

Looking for alternatives at the mo,as I use it a lot.

 

Twineham Grange (I think called Farmers Hand?) and Gran Moravia are available in Sainsbury's.

 

Castelli Vegetalia is available in Tesco.

 

All are brilliant alternatives to the real thing.
