Egluntyne Posted March 4, 2007 Share Posted March 4, 2007 Made this yesterday....Absolutely lovely......and NO FAT in it....although it does contain sugar 100g Allbr*n Cereal. 120g dark muscovado sugar 130g dried mixed fruit. 200mls strong tea (warm) 30g walnut pieces 100g sifted plain flour 1 and a 1/2 tsp baking powder 1 and a 1/2 tsp ground mixed spice a 450g greased and lined loaf tin required. Put cereal sugar and dried fruit into large bowl add the tea and leave to soak, covered for 30 mins. Add remaining ingredients. Stir until thoroughly mixed. If it seems a little dry add water. You are aiming for a dropping consistency. Spoon into prepared loaf tin and cook at gas Mark 4, 180 deg C, 350 deg F until firm and well risen. Best wrapped and kept for a day before eating ( No chance at Egluntine Towers!) Eat within 4 days. Can be wrapped and frozen. Very nice toasted. I've got a simliar recipe somewhere, which is like malt loaf, but is great for the old bowels because it has bran and prunes.
