scarlettohara
this year and thought I would try the Delia all in one mix from Waitrose. For £10 you get all the ingredients already weighed and you just add eggs, butter and lemon/orange zest. It looks really easy and is her own recipe

Chickendoodle
I have made the Delia cake ever since her book first came out (1979ish!) It is a fantastic recipe and I think its a really good idea to have the ingredients pre-weighed as if you dont usually use much dried fruit you always have loads left over. Having said that, I find the Christmas cake recipe too small and so I always use the 11 inch wedding cake version (no we are not that greedy - I make a square one and then the family all have a quarter each !) Remember to feed your cake every 10 days or so with brandy or cherry brandy to make it extra yummy Be careful if you have a fan oven as the cooking time is almost cut in half - it is in mine anyway Don't worry if it looks a wreck - it will taste lovely and fondant icing works wonders! chickencam
I also make Delia's cake every year, I find that I have to cook it on the conventional setting in my oven, the fan setting burns the outside before the middle is properly cooked.
