In the summer Mr Griffin spent two days building a six foot high fence and gate at the top of our garden to keep the chooks behind. The area they're in now, at a guess, is about 40ft x 15ft. It's got a few trees and along the back fence is dense hedging. Twice I've woodchipped the ground and twice it's all sunk without trace It now resembles the Somme

 

Obviously with the trees involved I cannot put a roof over all of it but I'd at least like to try covering some of it so that I can put down concrete slabs & Aubiose. Any ideas?

Big posts and a huge tarpaulin stretched between them? It might look quite pretty like this sort of thing

Or you could buy a cheap gazebo for a part of it, especially if you're going to slab an area.

Could the trees be used as tying points

I'd attach something between the tress, and if close enough, the trees to the fence, so that you could make a square and cover under that?
