Any Cup Cake Bakers?

I use milk as well - Camp coffee added makes a lovely coffee icing on chocolate cupcakes......

 

These are the cupcake/muffin hybrids I made for my (grown up) son's birthday..... I'd decided to make him Guinness Cake muffins (using the US family recipe for Wacky Cake as the chocolatey cake - and no Guinness!) with the cream cheese topping but he asked for Lemon Surprise cupcakes so I made both. I dropped the lemon cupcakes into the muffin wrappers so that they all matched...........

 

 

 

OMG!!! Im so pleased i did a kettle bell class this morning... my stomach hurts too much to eat!!!!

Lesley, I love these.... did you make your own cases or buy them???? they look stunning (and may disguise my terrible piping!!!)

 

Oh I've missed checking the omlet site.... but lost weight... I wonder why????

Thanks for the comment on my royal wedding cupcakes. I think my little boy ate 50% of them over about 3 or 4 days. He loved the flags. I didn't tell them they came with his sandcastle bucket we got at the beach (sneaky mummy pinched the flags) Hey - he got them eventually and loved them in cakes.

 

I've been making toppers tonight. I feel cupcakes coming on soon.

I make fruity buttercream which is really yum. Make the buttercream with half butter to icing sugar, then blend in the reduced juice of whatever fruit you fancy. Raspberries make a sweet/tart, bright fuchsia pink icing, rhubarb a paler pink but with a gobsmacking flavour. Blueberry is shockingly purple and I can't wait to try blackberry in the autumn.

 

The trick is to warm the fruit til the juice runs, then sieve it out and reduce it til is almost dry and you don't dare carry on. Let it cool then blend into the plain icing.

 

Looks gorgeous topped with edible glitter!
