Purplemaniacs Posted April 2, 2011 Share Posted April 2, 2011 I use the all in one method and have made cakes that rise well but since I have had my Kitchen Aid mixer they seem to sink in the middle. Any thoughts on why, everything else is the same? I wondered if I mix them for too long just because I like using the mixer. I do an all in one cup cake and the woman who's recipe it is won an award for it, so it's very good. She says, if you mix for too long the batter can become heavy and she recommends mixing it for a max of a minute. When I do any sponge I tend to do the classic way, ie cream butter and sugar with any flavouring if you want, add eggs one by one, then fold in flour. Usually comes out all lovely and light. I have only had a problem since I got my lovely new mixer, I used to have a hand held one so I probably didn't over mix it then.
