peachachecha Posted October 12, 2011 Share Posted October 12, 2011 Last year a 85 year old friend gave me her Mother's Jam Cake recipe and I made it for her. It was out of this world. I wanted to share it with you. Please forgive me for the US measurements. Bessie's Jam Cake-----made in place of fruitcakes Mix together: 1/2 cup butter 1 cup sugar 1 cup applesauce 1/2 teaspoon baking soda 2 eggs - beaten Shift together: 2 cups all purpose flour 2 teaspoons cinnamon 1/2 teaspoon cloves 1/2 teaspoon nutmeg 1 teaspoon allspice Mix all together and add 1/2 box raisins, 1 box mincemeat, 1 cup chopped nuts, 1/2 cup cherry preserves, 1/2 cup blackberry jam, and 1/2 cup strawberry preserves. Grease and flour the bottom and sides of an Angel Food Cake pan. Pour mixture in pan and bake in a 325 degrees F until done - approximately an hour. Olly Posted October 12, 2011 Share Posted October 12, 2011 That sounds delicious. I don't have an Angel Food cake pan but I've got a fluted tin with a central hole which would probably do. I have some measuring cups, although I'd probably convert the recipe to pounds and ounces, which is what we're more familiar with using here. How much is a 'box' of raisins, though? Each Christmas as I make this cake I will think of her. I am always tempted to make two of these so I do not have to share and I can have one all to myself.
