Seeing the post on giving parsnip to chickens, don't forget feeding yourself! I had a glut of parsnips from Christmas and today made this (scroll down a bit to see the recipe)

Even OH who doesn't like parsnips much liked it. I found the recipe in their book called " Book of Soups" New, Old and Odd Recipes, page 115. Enjoy! And made it with stock from Jamie's Christmas jerk ham recipe so it had a nice kick to it too.

Parsnips work well with curry spices, the only other way i can eat them is in Delia's parsnip puree which is basically parsnips pureed with double cream and loads of nutmeg salt and pepper, makes a good alternative to bread sauce and freezes well without the cream.

We add a spoonful of cashew-nut butter. It creates an amazing taste. Make it yourself, whizz up cashews and olive oil.
