chickencam Posted April 16, 2012 Share Posted April 16, 2012 I was making cakes to take take into the office tomorrow and I decided to have a go at piping. I have used one of the icing guns that you pump before with limited success, but found my reusable bag and the nozzles to fit it, which has been an issue in the past. I am very pleased with the results. I used butter cream made with 250g of icing sugar 25ml of milk, the zest of a lemon, a couple of drops of yellow colouring and 80g of butter. The only downside is that I seem to have broken my lovely Dualit hand mixer in the process. It's beaters got tangled and now they won't spin, I have only had it just over a year and it hasn't been abused. I will have to look for the guarantee I also made HFW's chocolate and walnut brownies, so much for spending the day tackling my ironing pile Quote Link to comment Share on other sites More sharing options...

Well done with the piping I have got through 4 handmixers (Braun, Morphey Richards, Kenwood) since I started making cupcakes in November last year . It's the buttercream that kills them everytime. All of mine the motor kept going but the beaters wouldn't go round. Something to do with the gears I think. I have now invested in a Kenwood Prospero standmixer and up to now (touch wood) haven't had any problems with it. Quote Link to comment Share on other sites More sharing options...
Chickendoodle Posted April 17, 2012 Share Posted April 17, 2012 I would recommend that you get some Lakeland piping bags on a roll http://www.lakeland.co.uk/10666/Get-a-Grip-Piping-Bags They are brilliant - rough feeling on the outside so they don't slip. I always found the proper icing bags a real pain to wash - they are hard to dry and whatever I did they always seemed to retain an unpleasant smell. You can wash these and re-use them if you want but I tend to just throw mine away I just use a very cheap hand mixer for my buttercream. I made about 20 pounds of it for the cupcakes for my YD's wedding last year and it is still going strong. Only cost about a tenner (I mix the icing sugar in with a wooden spoon first before beating to save me and the kitchen being covered !) Also a brilliant tip I discovered when I was planning the cakes for the wedding - buttercream freezes beautifully ! I had the whole of my small freezer filled up with it and defrosted it overnight in the fridge. Still perfect Quote Link to comment Share on other sites More sharing options...
