Christmas Foodie Swap Recipe Swap

I know there was a request for the biscotti recipe which was part of the swap I sent but this weekend we had some unexpected friends call round so I put on a ploughmans with my foodie gifts and wow!!! So I would really love the recipes for the picallili, onion marmalade but especially the pickled onions with chilli which were really delicious, luckily I didn't put them all out so had a few saved back which I've just polished off for lunch with some really strong cheddar.

Biscotti

 

250g plain flour

150g caster sugar

1 egg, plus 1 extra egg yolk for glazing

1 tsp baking powder

pinch of salt

50g butter, melted

50g almonds

grated zest of a small orange

 

Preheat oven to 180/160 fan and line a large baking sheet with baking/greaseproof paper

 

Put the flour, sugar, baking powder and salt in a bowl, mix together and make a well.

 

Lightly beat the egg and add to the well with the melted butter and gradually work into the flour, add the almonds and orange zest then tip out onto the worktop and knead for about 5 mins.

 

Divide in half and roll out each half into a slightly flattish loaf about 5cm wide. Place both logs on the baking sheet, brush with the beaten egg yolk.

 

Bake for 15 mins then reduce the temperature to 170/150fan and cook for 20 mins.

 

Remove from the oven and cut the logs into diagonal slices about 1cm thick. Lay the slices back on the baking tray and return to the oven for another 5 mins.

 

Cool on wire racks.

 

They will keep for two weeks in an airtight container and are definitely meant for dunking, coffee works well but vin santo works even better.

I think this was the chefs salt recipe I used :D:D

 

I have a few, I could be wrong...but they are all similar :D

 

1 cup salt

1 teaspoon paprika

1 teaspoon black pepper

1 teaspoon white pepper

1/4 teaspoon celery salt

1/4 teaspoon garlic salt

 

shove everything in a bowl and mix :D

 

use on whatever you put salt in.
