riane Posted May 30, 2014 Share Posted May 30, 2014 OH having 50th birthday party in three weeks. Caterers who are family friend are ill and not going to be able to do it. So I started today making ahead for freezer with two large lasagna. I am thinking of making a lamb tagine to freeze and chicken enchiladas again to freeze. Thought I could do jacket spuds and sausages , bread rolls and cheese board on the day. What else is easy to make ahead? The people will come through out the afternoon so not feeding everybody at once. I have a hostess trolley and warming plates so can keep things going. Not done a vegetarian dish? kinsk Posted May 31, 2014 Share Posted May 31, 2014 Was going to suggest quiche aswell. If you did a couple of cheese and tomato ones then you have your veggie option covered. A friend of mine always does a lovely cheesy potato bake type thing for veggies too. Lavenders_Blue Posted June 1, 2014 Share Posted June 1, 2014 Quiche is good for veggies, or how about a veggie lasagna as you're making a meat version anyway. You could make it with Quorn mince like a regular lasagna (just make sure you label which is which!) or with roasted veggies layered with a tomato or a cheese sauce. Jacket spuds is a really good idea as they will keep warm in the oven throughout the afternoon and you can do a variety of make-ahead fillings - grated cheese (buy the ready grated for ease!), tuna mayo, chilli, coronation chicken, hummus etc. Are you doing puddings?
