Boiled up the apples for 45 mins, strained overnight, added 500g to each 500g of juice, boiled up again ( pan boiled over, cleaned up sticky swamp ) pan back on heat, let it reach 'jam' temp on my thermometer, poured into jars and once cooled it hasn't set properly. Adding a little lemon juice will make it set and won't affect the taste. I thought the same about the pectin was was quite surprised it didn't set. Am reboiling it as we speak so fingers crossed.
