Charlottechicken Posted December 15, 2016 Share Posted December 15, 2016 I remember a discussion on here a few years ago, (I've just re-read the thread), and I said I would try to make some of these. Well, fast forward three years, and I've given it a go, prompted by a visit to Chipping Campden where I saw a 200g box of them for 16.99 I bought a pack of cooked and peeled Merchant Gourmet chestnuts for £1 in Asda (think it is 200g size), and have just completed the first boil in sugar, water and vanilla extract. I must say they smell divine and now the syrup has cooled, it tastes lovely. Just have to let them soak for 12 to 18 hours before I boil again, and again, before they go into the oven on Sunday to dry out. Anyone else making them this year? After spending three days soaking and heating, and then drying in the oven, I've ended up with cold firm and over sweet chestnuts! Not particularly nice, but as I've never tried a proper one I'm not sure what they are supposed to taste like. I like hot chestnuts, but they are fairly sweet anyway, and better when warm!
