Joojoo
Just made lovely lovely lovely chocolate cake - it's in the oven cooking as I type. Has Sainsbury 70% plain chocolate melted into it. Absolutely fine. The problem came when I just tried to make the chocolate filling. 2 bars of Lindt 70% chocolate broken up into a bowl over warm water. I haven't a clue what's happened to it but it looks like caviar!!! Abolutely revolting and rubbery. Definitely didn't burn it cos water was on a low heat. Off out to shops now to buy some bournville. Anyone got any ideas what's gone wrong? I won't be using Lindt again that's for sure.
fairy&cake
this happened to me before i put the choc broken up in a oven glass bowl on 90 degrees and leave it for 20 mins instead. ouyt the Family Cookbook by HFW
Cinnamon
Hi, Yes, I don't know the scientific term, but its because either a splash of water got into the chocolate or the whole thing got too hot. It happened to me once. Its a shame as its such a waste of chocolate
chrisnrob
This happened to me once when I mistakenly picked up Lindt 90% cocoa solids rather than 70%. Dashed out and got 70%, tried again and everything was fine. Rob
chickencam
I think it was a drop of water that got into it. You also have to be careful that the bottom of the bowl is well above the water.
Joojoo
That's really strange then as the recipe called for 2tbsp of water to be added. The other chocolate from Sainsbury's which went into the cake was 70% and had 3tbsp water added but that was fine. Very strange Anyway I popped out and got 2 blocks of Bournville 60% and it's fine. Just waiting for it all to cool down and then I can put it all together - yummy

Joojoo
ooh it was horrid. All I kept thinking was fish eggs urgh Never mind I made up for it - chocolate cake with cream & chocolate mousse filling. I was running out of time in the end as I had to run out and get more chcocolate so just slapped the cream around the side but my god it was nice I would post a piccie but I can never work out how to do it.
