anyone got a good cake recipe to use up some eggs pls?

we're beginning to, erm, get overloaded with eggs- and they said battery girls wouldn't lay a lot!!! ;)

 

I need to use up 4 old free range eggs we have that we bought before the girls came- I'd hate to throw them away. As we're having fried eggs (from our girls) chips and peas for tea I thought I'd make some sort of cake with the other 4.

 

Every victoria sandwich I've made has been a flop but I'm willing to try again if anyone has a good recipe for it, or anything else cakey :)

 

I could even make a load of scones and freeze them, do scones have eggs in them?

 

anyway, anyone got some nice cake recipes pls :)

Victoria sponge sandwich

 

6 oz SR flour

6 oz butter

6 oz sugar

1 tsp baking powder

3 eggs

 

Mix together till light and fluffy then tip into 2x7 inch greased tins. Bake at 190 degrees centigrade (gas 5) for 20 mins or until risen. Cool on cooling rack for at least 10 mins. Finish with butter icing and strawberry jam in the middle and butter icing on top. Yummy!

Delias's fruit slab cake:-

 

You need a roasting tin 10" x 8" x 2" deep well buttered.

 

Oven 180

 

225g butter or margarine

225g caster sugar

4 eggs

few drops almond essence

275g sr flour

110g mixed fruit

50g flaked almonds

25g glace cherries

1.5 tablespoons granulated sugar

 

cream butter and sugar then beat in eggs little at a time

then add almond essence

then fold in flour spoonful at a time then fruit and cherries

put in greased tin sprinkle with almonds and sugar and bake for 45-50 mins until springy in centre

leave in tin for 10 minutes then turn out

well, it's in the oven, i didn't have any cherries so substituted them for more dried fruit and used vanilla extract as had no almond essence and I've popped a few pecans on top too- also bunged a load of egg shells in the oven with it to crush up for our girls! :)

How did your cake turn out in the end?

 

really nice, I'm going to make it again at some point but with our girls eggs and will add some cherries next time. Had to resort to what was in my cupboard this time but it was still really nice indeed! :)

 

mmmm, I love Scotch pancakes and I make homemade jam so that's one for the 'must make' list.

that's what I do and i add ham and/or chorizo, onions and peppers (cooked first then set aside). Then sprinkle some cheese on and grill just to finish off.

 

mmmm, hungry now :)
