Carol U Posted January 12, 2008 Share Posted January 12, 2008 Don't know if any of you have read the above mentioned book by Barbara Kingsolver. If not, I would highly recommend it. It is an account of the author and her family moving to an organic farm and spending a year living entirely on seasonal produce which they have either grown/raised themselves or sourced locally. One of the many gems which I thought would interest Omleteers is that two separate studies in U.S. have shown that: "eggs from chickens that ranged freely on grass have about half the cholesterol of factory farmed eggs and it's mostly LDL, the cholesterol which is good for you. They also have more vitamin E, beta-carotene and omega-3 fatty acids. The more pasture time a chicken is allowed, the greater these differences".
