little chickadee Posted March 5, 2008 Share Posted March 5, 2008 I promised someone this recipe ages ago and can't remmeber who it was now. so here goes. I can't remember where it's from because I've changed it and handwritten it into my book Thai baked fish 1 pack of frozen Coley fillets (4 or 5 pieces) - defrosted 2 large garlic cloves - thinly sliced 2 sticks lemon grass cut into 2 0r 3 pieces lengthwise Juice and grated zest of 2 limes 1 inch grated ginger 2 tbsp sesame oil 2 tbsp soy sauce 1 - Wash the fish and place in large ovenproof dish 2 - Arrange garlic, lemongrass and chilli over the top of the fish 3 - Mix lime juice and zest, ginger, oil and soy sauce in cup. 4 - Pour over fish and marinade for 1 hour 5 - Preheat oven to gas mark 5, cover fish with foil and bake for 30 minutes Really really quick and easy. It's marinating in the fridge at the moment. OH and daughter are at the British Museum with school today, so I have both dogs and my son to myself (when he gets back from school) Thought I'd do something in advance incase all hell breaks loose!
