Richard and Jo Posted April 26, 2006 Share Posted April 26, 2006 Perfect meringues 6 egg whites 6oz caster sugar Clean a glass bowl with boiling water and dry with kitchen towel (this stops the treacly bits forming). Whisk egg whites for 2 minutes. Add 1 oz sugar and whisk for 2 minutes. Continue until all sugar is used and meringue should be glossy and thick. Spoon into ball onto baking parchment and cook for about an hour on 140c. They should be nice and chewy inside.
