Cinnamon Posted June 30, 2008 Share Posted June 30, 2008 I have found that if you use 100% lemon juice insted of vinegar,& just add the light oil until it looks nice & gloopy without worrying about adding it all, it works really well. I often don't use as much oil as the recipe states. You need to trickle it in VERY slowly too I also prefer the dijon mustard to dry mustard,but thats just my preference. I have got a Braun hand blender, which I think is similar, and it works very well so long as you have something to anchor whatever you are making the mayo in while you mix with one hand and pour the oil slowly with the other (or have three hands).
