Asparagus Ideas?

Hi All

 

I am going through a real craving for the stuff and wanting a few spears everynight :? Not used it a great deal before but over the last 10 days cannot get enough so I'm hoping to tap into any tips you may have for cooking/serving asparagus?

 

I have tried B-B- & light frying but came out a bit stringy! so tips on getting this right would be lovely :D

 

I am a vege so anything not involving wrapping in bacon etc would be most welcome!!

I had a delicious free range egg and asparagus omlette in a tea room the other day. No idea how to cook it though, I suppose you'd saute the asparagus in some butter then add the seasoned beaten egg?

The woody stalks can be made into a fab soup 8)

 

Boil them in a litte water till they are soft then push the stalks through a metal sieve using a spoon rub the flesh into the sieve so the mushy inside of the stalk goes into the stock water but the woody stuff doesn't. Keep rubbing till all the flesh is gone it is quite obvious when this happens then thin with water if necessary to get the consistency you want and then if you like add a little cream :drool:

I actually got the recipe for the soup inside the label of a bunch years ago and I thought what a great way to use it up with no waste 8)

 

It sounds like hard work but it isn't and the soup is divine you can add things to it like a little garlic or onion etc :lol:

mmmm! sat at work with two big bunches of asparagus under my desk just thinking if all these lovely ideas and can't wait to get home!

 

The tartlets look so yummy!

 

Oh by the way I bought it at lunch time.. didn't just bring it to work with me :lol:

Lovely dipped into an egg I agree :D

 

Good just steamed then eaten with butter and black pepper.

 

We made a good asparagus and pea rissotto a couple of times, the asparagus just needs chopping into chuncks and steaming for a few minutes then adding to the rissotto towards the end of the cooking time.

I love Asparagus & would eat it every day if I could 8)

 

I either griddle it,drizzle it in olive oil & spinkle it with Maldon salt, or boil it for a short while & use it as dippy soilders in one of my hens wonderufl eggs :P

 

Saw Jamie Olivers version of this and it did look good :drool:

 

Add that to my list or things to try .. just short of the eggs as the only one laying regularly has stopped as broody and another has laid one then nothing since!

I like my asparagus plain and simple - but I do like it in a salad -

 

Crisp lettuce, warm asparagus, poached egg, toast croutons, parmesan shavings, with a freshly made olive oil, lemon and garlic dressing poured over it.

 

Serve with a glass of red wine :D

Then making tarts etc over the weekend.. :D
