Mrs Frugal
Chocolate Buttermilk Layer Cake 2 and 1/2 cups plain flour 2 tsp bicarbonate of soda 1 tsp salt 1 cup sunflower oil 1 cup buttermilk 1/2 cup cocoa 2 and 1/4 cups caster sugar 3 eggs 1 tsp vanilla extract 1 cup boiling water Line two 9 x 1&1/2" sandwich tins with greased greaseproof paper. Sift together flour, bicarb and salt. In a large bowl mix together oil, buttermilk, cocoa, sugar, eggs and vanilla. Add flour mixture and boiling water alternately to the cocoa mixture. Mix only until combined - don't over mix. The batter will be very thin. Pour into prepared tins. Bake in preheated oven at 150-160C for 35 minutes or until the cake springs back when pressed. Cool in tins for 10 minutes then transfer to racks. Sandwich together with chocolate icing.

clare*
That sounds good Kate. I've just sat down today for the first time with a cup of tea. I could just eat a bit of your cake with it
Mrs Frugal
I've got a couple of cooling racks with freshly baked cookies on. Fancy one of those instead? Chocolate chip and oat or ginger chocolate chips?
