Jam too sweet

I just use less sugar for my jams, my Tayberry jam this year is very tart (and yummy).

 

Sadly I am a very unorganised cook, so never keep any records, so can't pass on any quantities, but my elderly Readers Digest "the Cookery Year" talks about adding pectin to jam to improve the set and ends "The more pecin present, the more sugar it will set, but too much spoils the fruit flavour " I use a sort of reverse logic to assume that less sugar won't affect the set of the jam, regardless of wether I am adding pectin or not.

 

Hope that makes some sort of sense, I guess what I am saying is its best to experiment with small quantities till you find a better balance of sugar and fruit that you like.

I have been think of doing this too as my apple and mint jelly (inspired by all the lovely cooking recipes on her! :D ) is delish but too sweet for my tastes

 

I like them a bit tart too.. so will compare notes Egluntine :) Doing my next lot this weekend..

 

Did you have vinegar in your mint jelly recipe? - the one I make has and it isn't too sweet at all.

Right have tried to use less sugar in my bramble jelly, and it would not set.. :shock: so in the end had to keep adding sugar in until its almost the same as it would have been if I had followed the recipe.. :(

 

I have been thinking of adding more lemons/other tart things to the recipe next time and try that.. and will also try the vinegar if its a savory jelly..
