Pickled onions

My mum attempted her first batch of pickled onions over the weekend - I never have, so can not advise her, but I know a group who can!! :wink:

 

She said that the onions, once they had been soaked in salt for the given period of time, had felt sort of soft.

 

Is this normal, do they "crisp up" again when they are in the vinegar, or has something gone wrong?

 

All words of wisdom are eagerly awaited....

We make pickles most years and after brining they do go soft but then they absorb the vinegar and go crispy again. The salt takes out their juices and then they suck up the vinegar instead.

 

We also did a cooked version in spiced vinegar this year and they are softer but equally delish :D
