AnnieP Posted August 16, 2006 Share Posted August 16, 2006 First harvest of the year! 2 1/2 lbs of blackberries from our paddocks....yummy! plan is to turn most into a compulsory blackberry and apple crumble, but a few are going into a "blackberry and Gingernut Layer" (From Waitrose mag) 300g blackberries 200g caster sugar finely grated zest of 1/2 lemon 150g ginger nut biscuits 200g cream cheese 1 egg white 200ml double cream (keep a few blackberries to go on top) mix blackberries, 2tsb sugar, lemon zest. mix a bit, and leave in a cool place to marinate for 2 hours bash up the biscuits a bit (plastic bag and rolling pin style). not too much. Mix the cream cheese with rest of sugar and cream, beat egg white until it peaks, add to cream cheese mixture Then, best in sundae glasses, layer, spoonfuls of blackberries, biscuit, cheesey stuff. Repeat and top with cheesey stuff, add a few blackberries and some lemon zest. Yumtastic! And very delicious it was too on some home made scones I'll have to go out picking again at weekend, see if there's enough left on the bushes to make a crumble.
