I make it in the breadmaker as in my breadmaker recipe book but I am sure of you dont have one it can just go in the oven. Has no raisins but does have walnuts. best thing for me is has no dairy in and my daughter has dairy allergy. The topping however does have dairy as has icing sugar and philadlhia. missuscluck Posted February 3, 2009 Share Posted February 3, 2009 Jus, try this one. This is VERY tried and tested. My friend Clare makes this over and over for 'thankyou's' I have made it too. Its brilliant. MARY BERRY CARROT CAKE 150mls (1/4 pint) sunflower oil 250g (8oz) wholemeal self raising flour 2tsp baking powder 150g (5oz) light muscavado sugar 60g (2oz) walnuts roughly chopped 125g (4oz) carrots garted 2 ripe bananas mashed 1 tablespoon milk 1tsp ground cinnamon 7" tin Lightly grease the tin and line Put all ingrediants in a bowl and mix well. Put in the tin and level the surface. Bake in the oven at 180 or 350f gas 4 for approximatly 50 mins untill well risen and firm to the touch and beginning to shrink away from the sides of the tin. fluffyknickers Posted February 4, 2009 Share Posted February 4, 2009 here it is 2 eggs 165g brown sugar half cup of olive oil half cup of walnuts - chopped 1 and half cups grated carrot half tsp cinnamon 90g SR flour 90g strong plain white flour 1tsp bicarb soda I do this in the breadmaker on the cake setting and it really is amazing! However i would imagine you get just as good results in a normal oven Beat the eggs, oil, sugar and add the carrots and walnuts stiring in. Sift together the cinnamon, flours and bicarb soda and fold in to the wet ingredients and pour into a loaf tin baking til golden on top. topping 250g cream cheese 50 g soft butter 2tbsp lemon juice 125g icing sugar Whip all ingredients til creamy and top on the cooled cake Quote Link to comment Share on other sites More sharing options...
