Lesley Posted March 6, 2009 Share Posted March 6, 2009 Honey Ice-Cream 1 whole egg 4egg yolks 100g honey - use a scented honey if no other flavouring is to be added. 300ml whipping cream Break the egg into a bowl and add the egg yolks and honey. Set the bowl over a saucepan of simmering water, make sure the bowl doesn't touch the water, and whisk the mixture until it becomes thick and pale. The beaters will leave a trail of mixture when it is thick enough. In a separate bowl, beat the cream until thick and fold it into the egg mixture. Pour into an ice-cream maker and follow the instructions until frozen or use a plastic container and remove from the freezer regularly to stir in the forming ice crystals. I add flavourings such as Baileys, Camp coffee, or I stir in fruit puree when it is nearly frozen, my favourite is damson. Quote Link to comment Share on other sites More sharing options...
..lay a little egg for me Posted March 6, 2009 Share Posted March 6, 2009 No cooking at all required for these recipes: Easy vanilla ice cream recipe 4 eggs, separated 100g icing sugar (I use fondant icing sugar as I think the glucose in it helps the ice cream not be too hard) 1 tsp vanilla essence (I usually use more than this as I like it quite vanilla-y) 300 ml double cream (or a half-pint carton is near enough; I used whipping cream the other day and that was fine too) Whisk egg yolks with half the sugar until thick and pale. Whisk egg whites in another bowl until stiff and then gradually whisk in the remaining sugar (like making meringues). In yet another bowl (I never said it was easy on the washing up :lol: ) whisk the double cream and vanilla essence. Stir the cream into the yolk mixture then fold in the egg whites. Pour into a suitable container (an old 2-pint ice cream container). Freeze. Here is another one for when you have made meringues as it uses just the yolks Rich lemon ice cream 225g icing sugar 8 egg yolks rind of 2 large lemons 4 tbsp lemon juice 300 ml (half-pint pot) double cream Whisk egg yolks and sugar until very thick.
