redhotchick Posted May 9, 2009 Share Posted May 9, 2009 I bought a leg of lamb half price last weekend but it was still £10. There's only me and my OH so that would be a lot of money for one roast dinner. Anyway, I cut off the shank end, and put it in the freezer. It's large and should make a lovely casserole for 2 people. I roasted the rest and had it on Bank Holiday Monday. With the "leftovers" I made a curry with a jar of Madras sauce that I had in, with the addition of sweet pepper, onions and cherry tomatoes. Froze half the curry for another time. On Wednesday I put what was left in the slow cooker overnight with carrots, onion, potatoes, water and salt. (Scouse). I did buy 9 very large new zealand lamb shanks at the market last week for £40. Never seen shanks so big ! Serious bargain. So much for trying to empty / defrost the freezer - it's full again !
