Sent Him Indoors out for a thumb sized piece of ginger.

You can freeze it . Chop it into smaller bits then it's easy to peel & grate when you do need it.

I was going to suggest freezing it as well.If you mice it up in a food processor you can freeze little bits in an ice cube tray

well in his defence - it is a thimb sized piece - its just got the rest of the hand connected too

 

I love ginger kev puts it in chinese food too (in fact kev seems to put it - and garlic - in most things )

 

what about ginger cake?

freezing if is a good idea - ive done that too - i would probably peel the chunks before i froze them though

I was going to suggest freezing it as well!

 

It does also keep for a long time without freezing, my veg box leaflet suggested 6 weeks (I didn't get the chance to verify this though as my DH threw the ginger out when he saw it in our box because he didn't know what it was...)

I think I have enough ginger to try them all and have some left over to freeze!

 

Honestly....it was the size of a baseball glove.
