My neighbour sent me this one - Mix 1lb Chopped Rhubarb 1lb preserving sugar, seeds from vanilla pod and pod itself, and 3 large chunks of bruised root ginger, leave overnight. the next day remove the vanilla pod and put the rhubarb mix into a pan. Bring to the boil slowly and continue to boil gently, stirring frequently for approx 12 mins until setting point reached. Allow to cool for 10 mins and remove ginger.
