Does anyone have a rhubarb & ginger jam recipe

Glad you liked it. My neighbour sent me this one -

 

Mix 1lb Chopped Rhubarb 1lb preserving sugar, seeds from vanilla pod and pod itself, and 3 large chunks of bruised root ginger, leave overnight. the next day remove the vanilla pod and put the rhubarb mix into a pan. Bring to the boil slowly and continue to boil gently, stirring frequently for approx 12 mins until setting point reached. Allow to cool for 10 mins and remove ginger. Put in clean Jars.

 

edit - It is the same recipe as Cinnamon's :lol::lol:
