Cinnamon
I have the cooked down pulp straining through now, ready to cook up into Bramble Jelly tomorrow. Can anyone recommend anything in the way of an addition to make it a bit more special? I am thinking spices or booze.................. Maybe a dash of Kirsch - what do you think? ClaireG
I've seen recipes with creme de cassis as an addition.
Christian
A couple of cloves and a cinnamon stick add a really nice flavour. I have just made plum and walnut jam and it is lovely. Added a handful of chopped walnuts just as the jam started to set. That way the nuts don't all float to the top.
