..lay a little egg for me
I often find squash soup too sweet so use this one for spicy squash soup that came with some squashes in a veg box: Approx 1 kg squash/pumpkin 1 onion, sliced 2 cloves garlic 1 tsp finely chopped root ginger 1 chilli deseeded and finely chopped 1 tsp cumin 1 tin tomatoes 2 litres veg stock 200g coconut cream/ 200ml coconut milk salt and pepper to taste Fry onions, ginger, chilli in a little oil; add cumin and fry for 1 min; add tin of tomatoes, stock and squash. Simmer until squash is cooked through (about 20 mins). Add coconut (if using coconut cream, stir until melted). Liquidise soup and return to pan, season to taste. This is from memory, so I may come back to edit it once I find where I wrote the recipe down I have a feeling it may have some garlic in it... Edited to say: yep it did have garlic, and the chilli...how could I forget that? PS Use a big saucepan as it makes a lot... Happy chickens!
Thank you very much - spoilt for choice now! No idea which one I had seen, but as several squashs ripe/nearly ripe might have to try a few!
Rhapsody
Just to say I always oven roast mine in chunks first, the flavour is a hundred times better.
Happy chickens!
Thank you - did roast it, but still found it needed quite a bit of spicing up to give it flavour. Not sure I'll bother again, as I do love it just roasted!
Egluntyne
Add some chilli at the oven roasting stage! Divine.
BeckyBoo
Yes, I roast mine with garlic oil and also roast half a chilli. Blitz the lot, add veg stock and black pepper then try not to scoff the lot! Fab with fresh warm bread and proper butter. BeckyBoo
